Duncan’s Apple Fritters

INGREDIENTS

  •   4 Dessert apples, cored and quartered
  •   Self raising flour 130g + 30 grams for dusting
  •   Cornflour 50g
  •   Baking powder 1 tsp
  •   Ground cinnamon 2 tsp
  •   Sparkling water 500ml
  •   Caster sugar 80g + extra for dipping
  •   Creme fraiche
  •   Cocktail sticks to skewer the apple pieces (optional)

METHOD

1. Peel and core the apples and cut into quarters, set aside.

2. Preheat some oil for frying to 175 degrees centigrade (or until a piece of bread browns in 30 seconds)

3. To make the batter, combine both flours, baking powder, sugar and half the cinnamon, slowly whisk in the sparkling water until you have a consistency of double cream. (You may not need all of it)

4. Dip each piece of apple first into the reserved flour, and then the batter. Drop into the hot oil and fry till golden, turning frequently until golden. Drain on kitchen paper

5. Serve while piping hot with cinnamon sugar to dip, and crème fraiche to dollop!
